About Grains & Where to Buy Them

There are many different kinds of wheat. The two I use the most are hard white wheat (for yeasted breads such as sandwich bread, rolls, pizza, tortillas, hamburger buns, etc) and soft white wheat (for non yeasted breads such cookies, muffins, pancakes, waffles, banana bread type breads). Hard red is common, but not a flavor I prefer. I have used kamut in recipes such as pasta, muffins and pancakes. I use durum for making pasta as well. Spelt is another that I have used in muffins and it is delicious in waffles.

If you have an Amish store near you locally that may be an option.

You can buy grains off of Amazon, but it is not economical to do long term.

Window Pane

 

When you are making yeasted breads it is important for almost all of them to reach window pane. You check for this during the process of kneading your dough. You want to be able to pinch your dough and begin stretching it gently with your fingers to make it thin enough where you can see the light through it but for it not to rip.
